Pumpkin Pie Oatmeal Cookie
I found a healthy pumpkin oat cookie with only five ingredients. It had no egg, sugar, or butter. I read the reviews and thought, wow, people are rude, but it also told me I may have to adjust some ingredients. Here is the link to the original recipe from Deryn from Running of Real Food. I will also be trying it again and adding in my FASTer Way vanilla protein.
Ingredients:
1 can of pumpkin pie puree
2 tbsp. Maple syrup
2 cups Rolled or quick oats
1/2 cup chopped pecans
1/2 cup Chocolate chips, dairy-free
1 tsp Pumpkin pie spice
1 tsp of cinnamon
Directions:
Mix ingredients all together. You want them to be moist to stay together; this is why I added in more pumpkin puree. You can see the video on Instagram @fasterway2healthinsideandout
I used a large cookie scoop to make cookies. They do not spread out, so make them how you want them, flatten out, or leave them as a ball.
Bake at 350 degrees. The recipe said 10 minutes; I added seven more minutes; I wanted toasted cookies.
They came out chewy with just the right amount of sweetness and crunch.
