Granny’s Pancakes

I know you all can think of a favorite food. Does your food take you back in time? Pancakes do this for me. It doesn’t matter where I have them, I am always thinking about Granny’s pancakes. Does it taste like hers? Nope or pretty close.

I also think of my Aunt Peggy who made us silver dollar pancakes with peanut butter and honey. I had never had such small tasty pancakes. But they were not Granny’s.

Granny’s pancakes were the size of your plate. She cooked them in her iron skillet. They had the right amount of crispy outside and that fluffy moist inside.

She would help us cut them up into bite size pieces. She would cut rows across the pancake then turn the plate and cut rows again across the pancake. This allowed the butter and syrup to soak into every bite.

Pancakes are associated in my mind with a lazy weekend. Get up and enjoy your morning coffee, scroll social media or read the paper, walk the dogs then start cooking your morning breakfast at your leisure.

Our pancakes growing up always came on cartoon day. Cartoon day was Saturday. We did not have cartoons available 7 days a week. We only had 3 channels. These mornings we got to watch t.v and eat in the living room.

As a mom, this was our weekend breakfast on Saturdays too, or when the kids had someone spend the night. When friends came over this meant they got to have rainbow pancakes. Just food coloring.

Camping did not stop us either from having pancakes on the menu. They have the easy add water, shake and cook bottles. This was also the time when my kids and nieces and nephews started adding in the chocolate chips.

As a FASTer Way To Fat Loss coach, I still enjoy my pancake on leg day (Saturday). I sometimes have it just like Granny made or Aunt Peggy. I have been adding in extras to make them a little healthier, not much though. Add in a banana, protein powder, or looking for gluten-free protein added in pancakes. These are not bad at all. One of my favorites is the Kodiak brand protein pancake with blueberries and honey.

I know have my own pancake shaker from Pampered Chef. This makes mixing pancakes a breeze. Just add fresh ingredients, shake the bottle, and pour the batter onto a griddle. Makes enough batter for 6 or 12 pancakes at a time, and the recipe is right on the bottle! The cap doubles as a measuring spoon—no extra dishes are needed!

Looking at Granny’s recipe I had to giggle. She wrote in the directions -“cook”. So good luck with cooking. LOL. I’ll fix it and give you my tips on cooking your “favorite pancake”.

Ingredients

  • 1 egg

  • 2 T vegetable oil

  • 1 cup buttermilk

  • 1 cup flour

  • 1 T sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Directions

Cook – just kidding.

Beat eggs, oil, and buttermilk.

Add in dry ingredients in the order listed and beat until smooth. Let sit for 5 minutes till the pan is heated.

Add 1/2 pat of butter or use nonsticking spray (not on the iron skillet) to a pancake griddle, nonstick pan, or iron skillet on med-high heat.

When the pan is heated add 1/4 cup or 1/2 cup of pancake mix. Do not touch until you see bubbles form on the top of the pancake. This is about 3-4 minutes.

When you see the bubbles gently flip over and cook the other side for about 1 minute or less.

Serve with your favorite toppings.
