Not Your Granny’s Pancakes

These are not Granny’s pancakes! But you have to try them! You will be surprised as I was.

I am going into the third week of our summer shred with the FASTer Way. The great thing about the FASTer Way is we do not deprive or starve you. We eat whole foods. I like having different types of recipes and I am introduced to new foods. It’s not fancy food, you can find everything at your local groceries. If it has a mamma or grows in the ground we eat it.

The FASTer way meal plan had a new recipe for 3 ingredient pancakes. My thought immediately was, yeah right that ain’t going to be a pancake. I like trying new recipes, especially when Kenny is not here. He works 48 on at the fire station each week, so it’s new recipes or I don’t cook.

These pancakes were simple to make. I premade them the day before and heated them up at work. I found out in my rushing from one end of the island to the other to get to my clinics, that these pancakes travel well and are paired easily with my hummus and veggies and banana protein smoothie. Portable, easy to manage on the go and the main thing tasted good. I will be making them again.

Ingredients and Directions

  • 1 banana

  • 1 Egg

  • 1 tbsp almond butter

  • 1/2 tsp vanilla

  • 1 1/2 tsp coconut oil

In a medium bowl mash up banana. Wisk in egg, vanilla, and almond butter till smooth. Let sit for three minutes.

Heat coconut oil in a large skillet over medium to high heat. Give the pancake mix a stir before you pour it into a heated pan.

Pour pancake mix into the pan. I made two pancakes. Let cook for about 3 minutes. When bubbles start to form on the pancake you know it’s time to flip it. Let cook for about 2 minutes or less once you flip it.

Serve with your favorite honey or maple syrup.
