Tuna Patties
Tuna patties with whole food sides.
Mom used salmon, but every time I bought a can of salmon, it was full of bones. So I switched her recipe to tuna patties.
Ingredients:
6 cans of tuna in oil
3 eggs
1/2 cup of garlic herb bread crumbs
1 tsp marjoram
Oil for cooking
Flour for breading
Directions:
Open tuna and drain 3 cans of tuna, dump into bowl. Open the other 3 cans and dump oil and tuna into bowl.
Crack eggs into a smaller bowl, beat till mixed, and dump into tuna
Add in marjoram and bread crumbs. Mix well. You may have to add more bread crumbs if the tuna does not stay together to form a patty.
Heat oil at medium-high, about a 6, on an electric stove.
Place flour in a pie plate or dish where you can flour tuna patty and flip side to side in your hands
Grab a handful of flour in one hand and Scoop out a heaping tablespoon of tuna mixture with the other.
Drop the tuna onto the flour in your hand. Pick up flour from the plate and top tuna with flour. Press tuna down to form a patty.
Add in flour as needed to prevent it from sticking to your hands.
Toss the patty back and forth in your floured hands. It is usually messy.
When the oil has heated gently slide the tuna patty into the oil. Cook till brown and flip- about 4 minutes. Cook the other side till brown - about 2-3 minutes.
Place on a plate that is lined with paper towels. Do not stack on each other.
Serve with a salad and your favorite carb. Egg noodles was always a favorite when my kids where younger.
