Chicken Tuscan Soup

Who doesn’t like a good crockpot meal? Especially when I have my husband home to dump it in the crockpot to get it started. He even took time to video himself shredding the chicken and adding in the spinach, so I could make a reel later. One of the many reasons I love him.

This soup you can be served over pasta or added in a white bean to give you. You can keep it low carb and serve with a side salad or just eat it straight up like soup and enjoy.

Ingredients

  • 3-4 chicken breast or 12 thighs (our preferred)

  • 1 can of artichoke hearts cut up in oil (DO NOT DRAIN)

  • 1 jar of roasted tomatoes cut up in oil (DO NOT DRAIN)

  • 1 container of chicken broth

  • 2 cups of heavy whipping cream

  • 2-3 large handfuls of spinach

  • 2 garlic cloves minced

  • 2 tsp Italian seasoning

  • Salt and pepper

Directions

Dump all ingredients except spinach and cream into a crock pot. Cook for 4-6 hours, until the chicken is easy to shred.

Shred chicken. Add in cream and spinach.

Cook till spinach is wilted.

Freezer Meal or Prep Ahead

Place all ingredients except spinach and cream into a gallon freezer bag.

This is how I prepped it for Kenny. I did not freeze it. I left it in the frig overnight with instructions. Works well.
