Chocolate Boiled Oatmeal Cookies
This recipe was a staple sweet growing up. It was easy to make and required maybe 10 minutes to make. Over the years of making this for school functions, it was always a last minute “Mom I need to bring cookies”, I have altered and added other ingredients. I have added coconut flakes, sea salt, and caramel chips on top. I do love that this recipe has evolved into a healthy no bake energy bite. We are working on eating clean and with less sugar, so I am always searching for new recipes. This may be that I also just love to try new things, but when you are looking for that little sweet treat, with no guilt you can definitely grab the evolved healthy energy bite. When you measure peanut butter or honey it is always difficult to get all the PB or honey out of the measuring cup. I like to use the measure-all cup with pampered chef. It makes getting the ingredients out quickly and less messy. A unique adjustable plunger design cleanly ejects solid ingredients. Includes standard and metric measures.
Chocolate Boiled Oatmeal Cookies
2 cups sugar
1/2 cup evaporated milk
1 stick oleo (butter)
4 tablespoon cocoa
1/4 cup chopped pecans (optional)
2 1/2 cups oats regular (not the quick cooking per recipe) I have used quick cooking and it turned out a little drier-set quickly
2 teaspoons of vanilla
Before you begin, set out wax paper or parchment paper on an area to allow cookies to set. The paper needs to be large enough to hold about 18-36 cookies, depending on your PC cookie scoop.
Bring sugar, milk, butter, and coca to a full rolling boil stirring constantly. Turn down the heat and continue to stir allowing the sugar mixture to boil for two minutes.
Remove from heat and add peanut butter and vanilla to the sugar/cocoa mixture-blend well.
Stir oats and nuts into the cookie mixture.
Using your cookie scoop or large tablespoon -Spoon onto wax paper. Let set.
While they were setting I sometimes add coconut, toffee pieces or sea salt to the top to give them a little flare.
